Ingredients:
- 12 peeled, cooked prawns
- 1 small red onion sliced
- 1 small English cucumber, deseeded and sliced into thin matchsticks
- 1 stick celery, sliced into thin matchsticks
- 1 small carrot, sliced into thin matchsticks
- 2 spring onions, thinly sliced

- Dressing:
- 3 garlic cloves, crushed
- 4 Tbsp. fish sauce
- 4 Tbsp. lime juice
- 1 teaspoon grated lime peel
- 1 Tbsp. brown sugar
- 2 small red Thai chillies
Instructions:
Gently mix top ingredients together. Add dressing and toss gently. Serve.
Process dressing ingredients in food processor until well blended.
