Prawn SaladServes: 4 Total cooking time: 0 minutes

Ingredients:

  • 12 peeled, cooked prawns
  • 1 small red onion sliced
  • 1 small English cucumber, deseeded and sliced into thin matchsticks
  • 1 stick celery, sliced into thin matchsticks
  • 1 small carrot, sliced into thin matchsticks
  • 2 spring onions, thinly sliced
  • Dressing:
  • 3 garlic cloves, crushed
  • 4 Tbsp. fish sauce
  • 4 Tbsp. lime juice
  • 1 teaspoon grated lime peel
  • 1 Tbsp. brown sugar
  • 2 small red Thai chillies

Instructions:

Gently mix top ingredients together. Add dressing and toss gently. Serve.

Process dressing ingredients in food processor until well blended.
